しめさばの簡単燻製 、 さばのおろし方
しめ鯖を簡単燻製にしました。
古い鍋にアルミホイルを敷き、スモークチップを加熱。
煙が出たところで、しめさばをのせた焼き網を置き、
上にボウルをかぶせて燻煙しました。
鍋を直火で炙るので庫内の温度があがる熱燻に近い作り方です。
スモークチップを足しながら⑳分ちょっと燻煙しました。
できあがったしめ鯖燻製は、しっとりとした仕上りで、
適度なスモークがかかり、いい感じでした。

JELLY DONUT WITH PEANUT BUTTER GLAZE
1/2 cup buttermilk, warmed
1 package rapid yeast
1/2 teaspoon sugar
1/4 cup mashed potatoes
1 cup cake flour

1 cup powdered sugar

INGREDIENTS IN THIS DISH:
1 Leek (trimmed, washed and chopped)
700g of Potatoes (washed, peeled and chopped)
2 Cloves of Crushed Garlic (about 2 Teaspoons)
1 Litre of Liquid Chicken Stock (or Vegetable if desired)
25g of Butter
Salt and Pepper
Fresh Parsley (to garnish - optional)
Preparation Time: 10 minutes
Cooking Time: About 20 minutes

1 tsp chilli powder
2 tsp ground ginger
2 tsp ground coriander
2 tsp lemon juice
2 tsp tomato paste
1/2 cup plain yoghurt
1kg chicken thigh fillets, trimmed, quartered
75g butter, chopped
1 brown onion, halved, thickly sliced
2 garlic cloves, crushed
1 cinnamon stick
3 cardamom pods, bruised
2 tsp smoked paprika
1 cup chicken stock
1 1/2 cups tomato passata / puree
1/2 cup pure cream
Steamed rice to serve
