Shiitake Mushroom Risotto

Follow my instructions in this video to make yourself some restaurant style risotto. You will find my changes in the traditional recipe provide an original flavor and healthy appeal to this dish. Shiitake mushrooms are extremely beneficial to your health as they possess anticancer, antiviral, antibacterial effects and are powerful immune system boosters. Not to mention the additional health goodies from all the garlic in there...

Banana Ice Cream

Try this guiltless dessert- creamy banana ice cream!
Ingredients:
2 bananas, sliced
1 cup milk (almond, rice, soy, etc.)
2 Tbsp. almond butter or natural peanut butter

Directions:
1. Put banana slices in the freezer for about two hours.
2. Place all of the banana slices in a blender.
3. Add milk and almond/peanut butter to the blender.
4. Blend for 30-45 seconds, and add more milk if desired.
5. Serve immediately. Enjoy!

Servings: 3 Prep Time: 2 hours Cook Time: 0 minutes

Bonus Article: Beautiful From the Inside Out This evening, I had the opportunity to be a judge in a high school Pageant that awarded college scholarships, and it proved to be a huge eye opener for me. Throughout the interview process, swimwear competition and evening gown finale, it was amazing to me to see how some were so unsure of themselves, and others were beautiful from the inside out. It got me thinking, how in the world can some of these young ladies differ so much in confidence at the tender age of 18? Everyone obviously has a different upbringing, but how they actually feel about themselves is totally up to them. We have all heard of numerous stories of kids growing up that were told they were not going to amount to anything in life, and they still overcame great odds and were hugely successful as an adult. So my conclusion is that it is not so much the external influences, but the internal influences. What do I mean by this? I think you are the only one who can establish yourself as being beautiful from the inside out. Think about it-how many times have you received a compliment and you said, "Oh, no, that's not really true, I actually looked horrible in that picture"...? If this is what you are saying out loud to others, what are you saying to yourself? Or have you noticed a person that is not exactly the next Victoria's Secret model, but just seems so enviously confident in her own skin? What's going on inside her head? Is it possible that she has a different internal dialogue? Does she, perhaps, lift herself up, take steps when she is afraid, and is gentle with herself when she makes a mistake? I am guessing that a lot of you are not this way with yourself, or could definitely make an improvement. Figuring out why some people navigate this world with purpose and self-worth, and others just meander along is always going to be a life long mystery. However, I challenge you to examine your own self-esteem and self-image. How do you feel about yourself? When others give you a compliment, what do you say? When you look in the mirror, how do you feel about your body? Even if you feel you are a hard worker, a good family member, and a nice person-do you feel you are living life to the fullest? Be honest. If not, let's go through this journey together to figure out how we can get you to where you need to be. It is possible-I promise. When I was in my teens and early 20's, I really struggled with a positive self-image. I looked okay on the outside, but the inside of me was always in turmoil with external feedback. It wasn't until I was able to take some steps to learn to love myself, let go of perfectionism, and really embrace who I was that I became truly happy. It's really strange, but once I was able to just accept who I was, I felt free. I felt as if all the pressure was released off of my shoulders, and I could just be myself. Can you imagine how this feels? It's pretty fantastic. And I really desire this for you as well. I want you to know that you are truly beautiful from the inside out, but it is up to you to accept this. Please do, because you deserve to. Having a positive relationship with yourself impacts every aspect of your life. With a bit of determination, I know you can get there too.

Betty's Beef and Cheese Tacos

In this video, Betty demonstrates how to make Beef and Cheese Tacos. These tacos are composed of crisp taco shells filled with a picante-flavored meat sauce, covered by a blend of cheese and sour cream, and then topped with lettuce and tomato, served with assorted side accompaniments. YUM!

Ingredients:

1 pound lean ground beef
½ large green bell pepper, chopped
8-oz. jar picante sauce (or use 8-oz. homemade Perky Picante Sauce from bettyskitchen)
1/3 cup plain yogurt (You may substitute 1/3 cup mayonnaise, if you prefer.)
8-oz. container sour cream
1 cup shredded sharp Cheddar cheese
shredded lettuce and chopped tomatoes for toppings
sour cream with pickled jalapeno slices and guacamole for accompaniments (You will find a recipe for South of the Border Guacamole in bettyskitchen.)
12 fresh yellow corn taco shells

In a large skillet over medium-high heat, brown 1 pound ground beef and ½ chopped large green pepper, until beef is crumbly and no longer pink. Remove from heat and drain any excess fat. Stir in 8-oz. picante sauce and set aside. In a medium-sized bowl, stir together 1/3 cup plain yogurt, an 8-oz. container of sour cream, and 1 cup shredded Cheddar cheese and set aside. Now, fill your taco shells as follows: place 1/12 of the meat and green pepper mixture in the bottom of a taco shell. Spoon 1/12 of the cheese and sour cream mixture over the top. Place in a shallow baking pan, upright. Use a nonstick pan, or spray the pan with cooking oil spray. Continue filling the taco shells until all 12 of them are filled, and the meat and green pepper mixture and the cheese and sour cream mixture are completely used. Place aluminum foil over the pan of tacos to prevent the tops from over-browning. Bake at 375 degrees (F) for 10 to 15 minutes, and then remove the aluminum foil and bake or broil about 5 minutes longer, until lightly browned. (You should check the tacos while they are in the oven to make sure they don't get over-done.) Remove from oven, and serve tacos immediately. These tacos are nice when served on a plate containing shredded lettuce and chopped tomatoes, which can be used as toppings for the tacos. Sour cream with pickled jalapenos and guacamole are great accompaniments. You can also serve any leftover picante sauce alongside. I hope you enjoy these Beef and Cheese Tacos! Love, Betty 

Betty's Perky Picante Sauce

In this video, Betty demonstrates how to make Perky Picante Sauce. This is a quick and easy sauce that can be used as a dip for tortilla chips or as a sauce for meats and Tex-Mex entrees.

Ingredients:

½ cup finely chopped onion
¼ cup finely chopped green bell pepper
1 medium clove garlic, minced
1 tablespoon extra virgin olive oil
½ cup fresh tomato, peeled and chopped
1 ½ tablespoons chopped pickled jalapeno pepper
¼ teaspoon dried oregano
¼ teaspoon dried ground cumin
1/8 teaspoon salt
1 ½ tablespoons white vinegar
8-oz. can tomato sauce

Saute ½ cup chopped onion, ¼ cup chopped green pepper, and 1 minced garlic clove in 1 tablespoon heated olive oil, until vegetables are tender. Combine sautéed vegetables, ½ cup chopped tomato, 1 ½ tablespoons chopped pickled jalapeno pepper, ¼ teaspoon dried oregano, ¼ teaspoon dried cumin, 1/8 teaspoon salt, and 1 ½ teaspoon white vinegar in container of an electric blender. Process for a few seconds, until smooth, but still showing bits of the individual ingredients. Add an 8-oz. can of tomato sauce, and pulse or stir well. Pour into a serving bowl and serve immediately. (You may cover and chill the sauce to serve it cold; also, you may heat it in a small pot, if you prefer to serve it hot. It is very versatile!)
